I hand picked each fig that went in that bowl, the =ipe ones go in the bowl the questionable ones get turned into jam(i =ave a bunch in the freezer now getting ready for some jam or ice =ream). A fig should be soft, juicy and sweet and barely held together =y its skin. The wieght from the figs on top and being picked at through =he night damaged the ones on the bottom. You'll see today that I have =hem arranged in a single layer so that wont happen again. These figs are in peak season and they are very delicate. My mistake =on't happen again.
