In iTunes > Phone > Summary > select encrypt backups (and set a password) & click Manually backup. If you want to save that backup file somewhere, after iTunes finishes, from the Finder (desktop) choose Go > Go to Folder and paste this location in there: -/Library/Application SupportfMobilcSync/Backupt This is all the iPhone/iPad/iPod Touch backups on your computer. Copy the most recent folder to whatever media you want to keep it on (flash drive, etc.). To open it again you'll need to enter the password you set. If you do NOT encrypt the backup / set a password, the passwords on the device are not saved, nor is any of the Health App data. Do I want to ask why you want to know this?
