I also could install a Night Blooming Jasmine shrub in place of some purple Bouganvillea west or north of the pool. This shrub can grow large, 10' or smaller and blooms intermittently throughout the year with night time only fragrance. Again, all of this needs as much sunlight as possible but they display flower they are very fragrant, much more than the Gardenia. You need to get real close to Gardenia flowers to pick up the fragrance.
